This is the final week for our retail market to be open this year. Will close after this Saturday, November 20.
On Wednesday we will make the last production of "no sugar added" apple sauce. On Thursday, we'll make fresh apple cider and Friday, fresh pasteurized apple slices. Saturday we will sell our remaining apples and some processed products at reduced prices. Prices on cider, apple sauce and slices will not be reduced.
Some of you know that I started experimenting with preservation of prepared, ready to use refrigerated fresh fruits some 20 years ago, before retiring from CRYOVAC. Initial work was on fresh peaches with essentially no success. Continued work in this area as got Perdue's Fruit Farm going. Success was first found with apple slices about 10 years ago. Took until two years ago to figure out how to do fresh peach slices.
The breakthrough came via my favorite source of such solutions/opportunities--SERENDIPITY.
Success in preserving fresh peach slices is closely related to variety and ripeness. During this season we processed peaches of numerous varieties and degrees of ripeness.
Now we have to evaluate all these test samples. Would some of you like to be involved? Sure could use your help!
If interested, this Saturday will have (2) package samples for you to take home and use to make a pie or cobbler. Along with a evaluation form to be filled out and mailed back to me. Returned stamped envelope is included.
